Raspberry Jam Oat Bars

The bars are easy any quick to get into the oven, and you can substitute the raspberry jam for any other flavour you like.

Ingredients:

  • ½ cup of brown sugar
  • 1 ½ cups all-purpose flour
  • 1 ½ cups of rolled oats
  • ½ tsp baking powder
  • 125g unsalted butter, melted
  • 1 large egg
  • 1 cup of raspberry jam
  • Pinch of salt

Method:

  1. Preheat oven to 180 fan-forced
  2. Melt the butter in a bowl in the microwave. Mix in sugar, egg flour, oats baking powder and salt
  3. Line a 20cm square metal pan with paper with overhand to make it easy to lift out later. Spread 1 ½ cups of the oat mixture across the base and make the surface reasonably smooth
  4. Spead jam across the surface. If you r jam is a bit firm jelly like you might want to war it up briefly to make it easier to spread
  5. Crumble reaming oat mixture across the surface using your fingers
  6. Bake for 30 min or until the surface is golden
  7. Allow pan to cool fully before lifting using the overhang paper a cutting into 16 squares.
