Thumbprint Heart Cookies

You don’t need a fancy cookie cutter or special equipment to get these delicious heart shaped cookies to look perfect and taste even better. They are made by hand, and each one is its own unique heart that you create. These cookies are easy and simple to make, and perfect for any occasion.

Ingredients

  • ¾ cup of softened butter
  • ½ cup lightly packed brown sugar
  • 1 egg (or 1 tbsp ground flax + 2 tbsp water for vegan option)
  • ½ tsp vanilla extract
  • 1 ½ cups plain flour
  • ¼ tsp salt
  • ¼ cup jam of choice (raspberry, strawberry, apricot, etc.

Method:

  1. Preheat oven to 190°C and line a baking sheet with parchment paper
  2. Mix with an electric mixer, butter and brown sugar on high until light and fluffy
  3. Add egg (or substitute) and vanilla extract. Mix until fully incorporated
  4. Add flour and salt, and mix until a soft dough forms
  5. Roll the dough into 2.5cm balls and place on baking sheet about an inch apart
  6. Gently press your thumb or the rounded back of a teaspoon in the centre of each ball twice to form a heart shaped indent
  7. Bake for 12-15 minutes or until the edges a lightly golden
  8. Let cool on the baking sheet for 5 minutes then move to a wire rack. You can reshape the cookies while they are still warm to keep the shape perfect
  9. Once completely cooled, spoon a small dollop of your jam of choice into each heart-shaped centre
