
I made this Chocolate Cake for my brother and sister in law’s wedding after testing what seemed like a million recipes. Now it is the cake that everyone in our family makes when a chocolate cake is required.
Ingredients:
- 125 g butter
- 3/4 cup soft brown sugar
- 1/3 cup castor sugar
- 2 eggs
- 1 tsp vanilla essence
- 1/2 cup plain flour
- 3/4 cup self raising flour
- 1 tsp bicarbonate of soda
- 1/3 cup cocoa powder
- 1/4 cup hot water
- 1 cup buttermilk
Method:
- Preheat oven to moderate 180 C.
- Line base of deep 20cm round tin and brush sides with butter or oil.
- Beat butter and sugars in large bowl till light and creamy.
- Add eggs gradually, beating well after each addition. Add essence and beat well.
- Using a metal spoon, fold in sifted flours, bicarb soda and cocoa alternately with water and milk
- Stir 1 minute until well combined.
- Spoon mixture into prepared tin, smooth surface.
- Bake 45-50minutes or until skewer comes out clean when inserted in centre.
- Leave cake in tin for 20 minutes before turning onto wire rack to cool.
- Ice with buttercream or ganache topping depending on your choice. Decorate with chocolate curls.
