Maxine’s Best Ever Chocolate Cake

I made this Chocolate Cake for my brother and sister in law’s wedding after testing what seemed like a million recipes. Now it is the cake that everyone in our family makes when a chocolate cake is required.

Ingredients:

  • 125 g butter
  • 3/4 cup soft brown sugar
  • 1/3 cup castor sugar
  • 2 eggs
  • 1 tsp vanilla essence
  • 1/2 cup plain flour
  • 3/4 cup self raising flour
  • 1 tsp bicarbonate of soda
  • 1/3 cup cocoa powder
  • 1/4 cup hot water
  • 1 cup buttermilk 

Method:

  1. Preheat oven to moderate 180 C.
  2. Line base of deep 20cm round tin and brush sides with butter or oil.
  3. Beat butter and sugars in large bowl till light and creamy.
  4. Add eggs gradually, beating well after each addition. Add essence and beat well.
  5. Using a metal spoon, fold in sifted flours, bicarb soda and cocoa alternately with water and milk
  6. Stir 1 minute until well combined.
  7. Spoon mixture into prepared tin, smooth surface.
  8. Bake 45-50minutes or until skewer comes out clean when inserted in centre.
  9. Leave cake in tin for 20 minutes before turning onto wire rack to cool.
  10. Ice with buttercream or ganache topping depending on your choice. Decorate with chocolate curls.
